When missing persons expert Frankie Elkin arrives on a remote atoll in the Pacific, she quickly realizes the two most important members of the crew are the cooks. Their ability to throw together amazing and satisfying meals makes all the difference between happy coworkers or hangry campmates. Cook Ann immediately proves her point by preparing tuna poke, a classic Hawaiian dish. Ann’s version of this raw tuna salad includes macadamia nuts, lemon and honey. Frankie declares it one of the best things she’s ever eaten.
1. In a large bowl, toss together:
- 1 lb raw ahi tuna cut into bite-sized cubes
- ½ c Tamari
- 1 tbsp rice wine vinegar
- 1 tbsp sesame oil
- 1 tbsp canola oil
- 1 heaping tsp fresh grated ginger
2. Refrigerate 1-2 hours
3. When ready to serve, stir in:
- ½ c diced green onions
- 2 tbsp roasted macadamia nuts, coarsely chopped
4. Then whisk together and drizzle on top:
- Freshly squeezed juice from half
- a lemon
- ½ tsp Sriracha (or to taste)
- 2 tbsp honey
5. Finally, chiffonade stacked sheets of Nori seaweed for garnish
6. Can serve with additional offerings of macadamia nuts, green onions, Nori and Sriracha for individual customization
